1-2-3-4-5 Spare Ribs 糖醋排骨

Ingredients:

  • 1 lb chopped spare ribs

  • 2 tbsp shaoxing rice wine

  • 4 tbsp sugar

  • 6 tbsp black vinegar

  • 8 tbsp soy sauce (half dark soy / half light soy if possible)

  • 10 tbsp water

  • green onions (for garnish)

  • sesame seeds (for garnish)

Instructions:

  1. Sauté spare ribs - after cleaning and patting the ribs dry, in a pot or dutch oven, add a little oil and then fry the spare ribs for a couple minutes

  2. Add sauce - combine all the sauce ingredients (notice how the ratio is 1:2:3:4:5, hence the name!), and add it into the dutch oven with the spare ribs (should be ~80% covered)

  3. Simmer - bring the sauce to a boil on high heat, then cover and let simmer on medium-low heat for ~45 minutes (flipping over the ribs halfway through), the ribs should be a nice brown color

  4. Reduce sauce - if there is still a lot of liquid left, you can turn up the heat and start reducing the sauce while continuously mixing the ribs, until it is a thicker syrupy dark brown glaze

  5. Serve it up - plate it and garnish with some green onions & sesame seeds

  6. Enjoy!
