Hello there, thank you for visiting my page - chippyeats! My name is Chippy and I love everything food. I've always had a deep appreciation for dishes that excite the taste buds and many of my dishes are inspired by the food I had at home, which is a mix of Japanese and Chinese cuisine. My dad (aka the chef of our family) grew up in Japan, so most of the meals we ate for dinner were from Japanese cuisine. I've been lucky to grow up in cities where food has been a defining part of their cultures and I would love to share my love for cooking & eating with you!

My first large cooking project: preparing a full holiday meal for my friends! This was our last get-together of 2020 and I wanted to prepare something special to show my appreciation for everything these girls have done for me. Throughout this crazy year, we've been each other's support - doing virtual workouts, socially-distant runs, potlucks, attempting to start a podcast, and other fun memories - and so I wanted to host a holiday feast to celebrate how far we've grown together.
To start off, I needed to create a menu. Since it was a festive time of year, I wanted to choose dishes that were holiday classics. Something warm and oven-roasted... roasted brussel sprouts drizzled with balsamic vinegar and bacon for extra tastiness. Something beautifully colorful... roasted rainbow carrots with a maple & miso glaze. Something healthy (but also delicious)... a warm roasted cauliflower kale salad with edamame, red onions, croutons, and a miso tahini dressing. Something that will make a beautiful centerpiece... a whole spatchcock roasted chicken with a garlic-ginger flavor and honey soy glaze. A perfect balance of flavors and colors!
Now to the cooking - the day before, I dry brined the chicken with salt, pepper and herbs for that extra deep flavor and to draw out moisture from the skin (we want that extra golden brown crispiness). On the day, the oven did most of the work. I prepared the various glazes and the dressing, and that was it! No fuss, no mess, just an easy holiday meal. To finish the meal off right, my friend (and incredible baker) made some pear puff pastry tarts with mascarpone. Opening up our Secret Santa presents and listening to Christmas carols in the background, our hearts (and tummies) were full.

As one of my favorite anime movies and the highest grossing film of 2020 (not to mention the highest grossing anime and Japanese film of all time), Demon Slayer: Mugen Train is a must-watch film with insanely masterful animations and music (to save you from Googling: 98% Rotten Tomatoes, 8.7 IMDb, 97% Google users rating - think the whole world has consensus on this one).
You can probably already guess (and I hope you other anime watchers will relate with me on this one), I think one of the best parts about anime is their FOOD. Something about it just makes your mouth water and crave whatever is on the screen. Demon Slayer: Mugen Train is no different - already within the first several minutes of the film, one of the main characters, Kyōjurō Rengoku, is shown scarfing down a delicious beef rice bento box. In the iconic comedic scene, Rengoku repeatedly exclaims "UMAI! うまい!", which means delicious!
Very delicious-looking indeed... and so I couldn't help but try to recreate one of these gyunabe bento boxes for myself! The best part? It takes only 15 minutes to put this together. I think the only thing I love more than a delicious meal is a delicious & quick-to-make meal.
Of course I had to make a side-by-side comparison, so check out the picture for my finished product compared to the actual scene from the movie! I can't help but say... UMAI! うまい!
