Bibim Naengmyeon 비빔냉면
Ingredients:
1 pack naengmyeon noodles
1 cup shredded cabbage
1/2 cup julienned carrots
1/2 cup julienned cucumber
1 boiled egg (optional)
1/4 cup thinly sliced radish (for pickled radish)
1 tbsp vinegar (for pickled radish)
1 tsp sugar (for pickled radish)
1 tsp gochugaru (for pickled radish)
1.5 tbsp gochugaru (for sauce)
1 tbsp gochujang (for sauce)
1 tbsp soy sauce (for sauce)
1 tbsp mirin (for sauce)
1 tbsp sesame oil (for sauce)
1 tbsp honey (for sauce)
5 cloves chopped garlic (for sauce)
3 tsp roasted sesame seeds (for sauce)
sesame seeds (for garnish)
Instructions:
One day ahead: prepare pickled radish - combine pickled radish ingredients in airtight container and place in refrigerator
Prepare ingredients & sauce - boil egg, julienne carrots & cucumber, shred cabbage, and mix all sauce ingredients together
Cook noodles - cook noodles in boiling water according to package instructions
Mix! - here's the fun part, wear gloves and mix the vegetables, noodles and sauce together
Serve it up - serve in a plate or bowl, add on pickled radish and garnish with sesame seeds
