Dan Dan Noodles 担担面

Ingredients:

  • fresh noodles

  • 1/2 lb ground pork

  • 1/2 pack (40g) sui mi ya cai 碎米芽菜

  • 2 tsp shaoxing wine (for meat mixture)

  • 1 tsp dark soy sauce (for meat mixture)

  • 2 tbsp sesame paste 芝麻酱 (for sauce)

  • 3 tbsp soy sauce (for sauce)

  • 2 tsp sugar (for sauce)

  • 1/2 tsp sichuan peppercorn powder (for sauce)

  • 1/2 cup chili oil (for sauce) (homemade recipe below)

  • 2 cloves minced garlic (for sauce)

  • 1/4 cup cooking water from noodles (for sauce)

  • bok choi (optional)

  • chopped peanuts (for garnish)

  • chopped green onions (for garnish)

Instructions:

  1. Prepare chili oil - follow homemade recipe instructions below

  2. Make meat mixture - in an oiled wok or frying pan, heat the ground pork, once it is almost cooked, add shaoxing wine and dark soy sauce and pepper, mix and set mixture aside, then add oil and fry sui mi ya cai for a couple minutes

  3. Make sauce - combine all sauce ingredients

  4. Make noodles - cook noodles according to the package directions, combine some cooking water with sauce to make it more liquid, then drain

  5. Serve it up - pour sauce on bottom, place noodles on top and then top with the meat mixture, sui mi ya cai, bok choi (optional, any greens of choice), chopped peanuts and chopped green onions

  6. Enjoy!

Homemade Chili Oil

Ingredients:

  • 1/2 cup oil

  • 2 star anise

  • 1 cinnamon stick

  • 2 tbsp sichuan peppercorns

  • 3 tbsp red pepper flakes

  • 1 shallot or green onion

  • 1/4 tsp salt

  • 1 tbsp doubanjiang (chili bean sauce)

Instructions:

  1. Toast spices - in a small pot, lightly toast the star anise, cinnamon stick and sichuan peppercorns

  2. Add oil - add in the oil and over medium-low heat, heat shallot or green onion and add doubanjiang and red pepper flakes then let it sit for a few minutes

  3. Strain oil - strain the oil

  4. Store - let cool and keep in the refrigerator for up to a couple weeks

  5. Enjoy!
