1. Braised Beef Short Ribs 갈비찜 (Galbi-Jjim)
Ingredients:
2 pounds bone-in beef short ribs
2 carrots (~1 cup)
1 radish (~1 cup)
1 small apple/korean pear, cored & chopped (for sauce)
1/4 onion, peeled & chopped (for sauce)
6 tbsp regular soy sauce (for sauce)
2 tbsp brown sugar (for sauce)
2 tbsp honey (for sauce)
2 tbsp mirin (for sauce)
1 tbsp minced garlic (for sauce)
1 tsp sesame oil (for sauce)
1/4 black pepper (for sauce)
1 stalk green onion (for garnish)
Instructions:
Prepare short ribs - soak short ribs in cold water for 20 minutes (keep replacing with new water), then in a pot, bring water to boil and boil ribs for 6 minutes then rinse under cold water
Prepare sauce - combine all sauce ingredients (can place in a food processor)
Braise short ribs, carrots & radish - place the ribs in a dutch oven with 1.5 cups of water and add 2/3 of the sauce, boil over medium heat for ~30 mins, covered, then reduce heat & simmer for about 10 minutes, covered, add in carrots & radish and continue to simmer for 1+ hours (depending on your desired tenderness)
Serve it up - plate and enjoy with warm bowl of rice and assorted banchan

2. Korean Braised Potatoes 감자 조림 (Gamja Jorim)
Ingredients:
3 yukon/gold potatoes
1/2 carrot
1/2 onion
3/4 cup water (for braising liquid)
3 tbsp soy sauce (for braising liquid)
1 tbsp sugar (for braising liquid)
1 tbsp mirin (for braising liquid)
1 tsp minced garlic (for braising liquid)
1/4 tsp black pepper (for braising liquid)
1 tsp sesame oil
sesame seeds (for garnish)
Instructions:
Prepare ingredients - cut up potatoes, carrots and onions into large chunks (1-inch), and combine all braising liquid ingredients
Sauté potatoes - cook potatoes in oiled pan on medium heat for 4-5 minutes
Braise - add in braising liquid, add in carrots, cover and cook until potatoes are almost cooked through (~5 minutes), add in onion and cook uncovered for ~3 more minutes
Serve it up - stir in sesame oil and garnish with sesame seeds and serve

3. Korean Cucumber Salad 오이무침 (Oi Muchim)
Ingredients:
2 persian cucumbers
1 tbsp gochugaru
1/2 tsp minced garlic
1 tsp vinegar
1 tsp salt
1 tsp sesame oil
1/2 tsp sugar
1/2 tsp sesame seeds
Instructions:
Prepare cucumber - thinly slice cucumber (1/4 inch thick), mix with salt and set for 15 minutes, then drain liquid
Mix with ingredients - add in other ingredients and toss until well incorporated
Serve it up - enjoy as a side dish or as a little snack
