Grated Yam Soba Noodle 山かけそば


  • 1 serving soba noodles (buckwheat noodles)

  • 1/2 cup tsuyu (japanese dipping sauce / soup base)

  • 1/2 cup grated mountain yam (yamaimo / nagaimo)

  • 1 egg (for garnish)

  • 1 stalk chopped green onion (for garnish)

  • shredded roasted seaweed (for garnish)

  • bonito flakes (for garnish)


  1. Prepare ingredients - chop green onions, grate mountain yam, poach egg

  2. Cook soba - in boiling water, cook soba noodles as directed on package

  3. Serve it up - plate it up, add grated mountain yam, poached egg, green onions, shredded roasted seaweed and dried bonito flakes on top, and serve with tsuyu dipping sauce

  4. Enjoy!
