Ingredients:
1 serving soba noodles (buckwheat noodles)
1/2 cup tsuyu (japanese dipping sauce / soup base)
1/2 cup grated mountain yam (yamaimo / nagaimo)
1 egg (for garnish)
1 stalk chopped green onion (for garnish)
shredded roasted seaweed (for garnish)
bonito flakes (for garnish)
Instructions:
Prepare ingredients - chop green onions, grate mountain yam, poach egg
Cook soba - in boiling water, cook soba noodles as directed on package
Serve it up - plate it up, add grated mountain yam, poached egg, green onions, shredded roasted seaweed and dried bonito flakes on top, and serve with tsuyu dipping sauce
