Japanese Soufflé Pancake スフレパンケーキ


  • 3 egg whites

  • 2 egg yolks

  • 1 tsp vanilla extract

  • 1/4 cup all-purpose flour

  • 1 tbsp milk

  • <1 tbsp oil

  • 4 tbsp sugar

  • powdered sugar (for garnish)

  • blueberries (for garnish)


  1. Prepare first mix - mix egg yolks, vanilla extract, milk and oil, then sift in flour

  2. Prepare second mix (meringue) - whisk egg whites until foamy, then slowly incorporate the sugar, keep whisking until there are stiff peaks

  3. Combine two mixtures - take one-third of egg white mixture and whisk into egg yolk mixture, then incorporate the rest with spatula (do not overmix, you don't want to lose the air)

  4. Cook & steam on frying pan - scoop the combined mixture into three circular shapes in a lightly greased pan (can use paper towel), fry for ~1 minute then sprinkle some water, cover and steam for ~3 minutes, then flip on the other side and repeat

  5. Serve it up - plate it, garnish with powdered sugar and blueberries

  6. Enjoy!
