Japanese Soufflé Pancake スフレパンケーキ
Ingredients:
3 egg whites
2 egg yolks
1 tsp vanilla extract
1/4 cup all-purpose flour
1 tbsp milk
<1 tbsp oil
4 tbsp sugar
powdered sugar (for garnish)
blueberries (for garnish)
Instructions:
Prepare first mix - mix egg yolks, vanilla extract, milk and oil, then sift in flour
Prepare second mix (meringue) - whisk egg whites until foamy, then slowly incorporate the sugar, keep whisking until there are stiff peaks
Combine two mixtures - take one-third of egg white mixture and whisk into egg yolk mixture, then incorporate the rest with spatula (do not overmix, you don't want to lose the air)
Cook & steam on frying pan - scoop the combined mixture into three circular shapes in a lightly greased pan (can use paper towel), fry for ~1 minute then sprinkle some water, cover and steam for ~3 minutes, then flip on the other side and repeat
Serve it up - plate it, garnish with powdered sugar and blueberries
