Japchae (Stir-Fried Glass Noodles) 잡채

Ingredients:

  • 250g dangmyeon (korean sweet potato starch noodles)

  • 150g thinly sliced beef

  • 1 small carrot

  • 2.5 cups spinach

  • 1/4 red bell pepper

  • 1/2 onion

  • 5 fresh shiitake mushrooms

  • 1 egg

  • 1/2 tbsp toasted sesame seeds

  • toasted sesame oil (to finish)

  • Spinach Seasoning

    • 1 tsp minced garlic

    • 1 tsp toasted sesame oil

    • 1/4 tsp sea salt

  • Beef Marinade

    • 1 tbsp soy sauce

    • 1 tsp mirin

    • 1 tsp minced garlic

    • 1 tsp toasted sesame oil

    • 1/4 tsp black pepper

  • Noodle & Mushroom Marinade

    • 4 tbsp soy sauce

    • 1 tbsp honey

    • 1 tbsp brown sugar

    • 1 tbsp toasted sesame oil

    • 1/4 tsp black pepper

Instructions:

  1. Marinate beef - prepare "Beef Marinade" and mix with the beef until well combined, then set aside

  2. Cut ingredients - julienne the carrot and pepper, thinly slice the onion and mushroom

  3. Marinate mushroom - prepare "Noodle & Mushroom Marinade", use 1 tbsp of the marinade to add to sliced mushrooms (the rest of the marinade will be for the noodles), set aside to marinate

  4. Prepare spinach - blanch spinach in boiling water for 10 seconds, drain and run under cold water; squeeze spinach to remove excess water, then add "Spinach Seasoning" and gently mix until well combined

  5. Prepare noodles - add noodles to boiling water for 6 minutes, then drain and run under cold water, then drain and cut noodles; then add the rest of the "Noodle & Mushroom Marinade" to the noodles

  6. Cook egg crepe - beat the egg, add a pinch of salt, then on an oiled flat pan, on low heat, cook beaten egg and flip (create an egg crepe), then set aside to cool and cut into thin strips

  7. Cook vegetables - in a wok / pan, add a small amount of oil and cook vegetables in this order (add a touch of salt for each one): onion, carrot, red pepper, mushroom, marinated beef, then noodles

  8. Combine - combine all the ingredients together in a large mixing bowl, and add sesame oil and toasted sesame seeds to finish
