Khao Pad Horapa (Basil Fried Rice) ข้าวผัดโหระพา

Ingredients:

  • 1 lb chicken thigh (or protein of choice)

  • 1 cup cooked rice (preferable day old)

  • 6 thai chili peppers (bird's eye chili)

  • 6 garlic cloves

  • 1 cup thai basil

  • 1/2 onion

  • 2 eggs (optional)

  • 1 tbsp soy sauce (for sauce)

  • 1 tbsp fish sauce (for sauce)

  • 3 tbsp oyster sauce (for sauce)

  • 1 tsp sugar (for sauce)

Instructions:

  1. Prepare ingredients - slice onion, roughly chop thai chili peppers (save two chili peppers and nicely chop these to add in later) and garlic, then ground into a paste using a mortar and pestle (optionally add salt)

  2. Cook - in an oiled pan or wok, stir-fry paste for 30 seconds then add onions until half-cooked, then add chicken and cook until almost fully cooked (optionally add some ground pepper)

  3. Add sauce & rice - add in all sauce ingredients and cooked rice, mix until sauce is well incorporated, add nicely chopped chili, then optionally, create a space on the pan, add some oil then crack two eggs and scramble in pan, once cooked, mix with rest of the ingredients

  4. Add basil - turn off heat then add basil until just wilted

  5. Serve it up - optionally garnish with some lime and cucumber

  6. Enjoy!
