Mapo Tofu 麻婆豆腐
Ingredients:
1/2 lb minced beef or pork
1 pack firm tofu
1 onion
4 stalks green onion
1 cup chicken stock
3 cloves garlic
2 tbsp doubanjiang (for sauce)
2 tbsp red chili flakes (for sauce)
1 tbsp ground peppercorn (for sauce)
1 tbsp chili oil (for sauce)
1 tsp corn starch (for sauce)
1 tsp sesame oil (for sauce)
Instructions:
Prepare ingredients - dice onion and slice green onion, cut tofu into cubes, mince garlic
Cook - in a pan, add oil, then fry garlic, onion and green onion until fragrant, add minced meat and cook
Add flavor - add chili oil, ground peppercorns, red chili flakes and doubanjiang
Add tofu & chicken stock - add in cubed tofu and chicken stock, mix carefully, then simmer on low heat for 10-15 minutes
Adjust the flavor - at this point, there should be less liquid, add some corn starch to thicken the sauce a bit, and adjust the flavor with salt & pepper if needed
Serve it up - drizzle with sesame oil and garnish with spring onion, then plate
