Sichuan Dry Fried String Beans 干煸四季豆


  • 1 lb string beans

  • 1/2 lb ground pork

  • 1/4 cup oil

  • 5 dried chili peppers

  • 2 tsp sichuan peppercorn

  • 4 cloves garlic

  • 1 knob ginger

  • 1 tbsp shaoxing wine

  • 1 tbsp light soy sauce

  • 1/2 tsp dark soy sauce

  • 1/2 tsp sugar


  1. Prepare ingredients - mince garlic and ginger, de-seed and chop chili peppers and soak in warm water, wash string beans and dry thoroughly

  2. Fry string beans - in a wok or pan, add 1/4 cup oil, then shallow fry green beans until slightly scorched, then set aside

  3. Fry aromatics & pork - in oiled wok or pan on low heat, at aromatics (chili peppers, sichuan peppercorn, garlic, ginger), fry for a minute, turn heat to high and add ground pork, cook until no longer pink, then add back string beans, then add shaoxing wine, light soy sauce, dark soy sauce and sugar, stir-fry and mix well

  4. Serve it up - serve on a plate, enjoy with some rice
