Three Cup Chicken 三杯鸡


  • 4 chicken thighs

  • 2 tbsp sesame oil

  • 1/4 cup shaoxing wine (for sauce)

  • 1.5 tbsp light soy sauce (for sauce)

  • 0.5 tbsp dark soy sauce (for sauce)

  • 1 tbsp rock sugar (sub: brown sugar) (for sauce)

  • 1/2 red pepper

  • 2 stalks green onion

  • 1 handful thai basil leaves (sub: basil leaves)

  • 8 slices ginger

  • 8 cloves garlic


  1. Prepare ingredients - cut red pepper into one-inch chunks, cut green onion into two-inch pieces, slice ginger, mince garlic and cut chicken thigh into chunks

  2. Rid chicken of impurities (optional) - blanch chicken in hot water for a few minutes then drain

  3. Stir-fry - in a wok or pan, add sesame oil, then add ginger and garlic, frying until aromatic, then add chicken, fry for another minute, then add sauce ingredients (shaoxing wine, soy sauce, sugar) and cover for five minutes

  4. Add bell pepper & green onion - add bell pepper & green onion and cover and cook for additional two minutes

  5. Reduce sauce - uncover and turn up the heat to reduce the sauce to desired consistency

  6. Add basil - turn off the heat and add basil, letting it wilt with the residual heat, finish off with a drizzle of sesame oil

  7. Serve it up - plate it and eat with rice
