Yakiniku Donburi (Japanese BBQ Bowl) 焼き肉丼
Ingredients:
1/4 lb sliced beef
1/2 pack shimeji mushroom
1/2 pack maitake mushroom
1/2 pack enoki mushroom
1/2 onion
1/4 cup homemade yakiniku sauce (see below for recipe, better prepared one day in advance)
1/2 tbsp butter
1 tsp brown sugar
green onions (for garnish)
Instructions:
Prepare ingredients - cut off stems of mushrooms, cut onions into strips
Prepare onions & mushrooms - in a pan, melt butter, then add in onions and cook until translucent, add mushrooms and cook until no longer raw, then add brown sugar to slightly caramelize, optionally add 1 tbsp of yakiniku sauce
Prepare beef - season with salt & pepper on both sides, fry on pan until no longer pink, then add in rest of yakiniku sauce
Serve it up - on a bed of rice, add mix of onion & mushrooms, place pieces of beef on top, and garnish with green onions and extra sesame seeds

Homemade Yakiniku Sauce
Ingredients:
3 tbsp soy sauce
2 tbsp sake
2 tbsp mirin
1 tsp sugar
1/2 tsp rice vinegar
1/2 tsp miso
1/2 tsp katsuobushi
1 tsp grated garlic
1 tsp grated ginger
1 tsp sesame seeds
Instructions:
Make sauce - in saucepan, add soy sauce, sake, mirin, sugar, rice vinegar, miso, katsuobushi, garlic and ginger, then simmer for 2 minutes
Strain sauce & add sesame seeds - strain the sauce mixture and add sesame seeds
Store - let cool and keep in the refrigerator for up to a month
